Steamed eggplants

Very popular in Bulgaria for winter supplies. The recipe is shared by Dimitar Ermenkov from Sandanski.

Preparation method

Wash the eggplants and without peeling, cut them into 1 cm thick discs. Salting with 400 g of salt and left for 4-5 hours, then wash them. 2 l of water and 2 l of vinegar are mixed together and put to boil. In this mixture, dip the eggplants. Boiled for about 10 minutes, then removed and allowed to cool in a baking tin. The cooking oil is fry clipsed and left to coll off In it dip for a little the eggplants, then arrange them in jars. Among them are spinkled chopped garlic, dill parsley and peppercorns. Eggplants, so placed and sealed in jars, are soaked with the colded oil and sterilized for 30 minutes.
