Katino meze


Short Description

It is served in all taverns and restaurants in Bansko and Dobrinishte. Its preparation is based on old recipes and environmentally friendly home-made products. Degustation of traditional specialties, among them Katino meze, helps visitors to feel closer to the typical customs and culinary traditions of the local population.

Preparation method

Cut the pork into small pieces and fry it, add the mushrooms and onion and continue to fry until the onions darken. After 1-2 minutes, add the tomato paste, wine and spices. Add about 30 ml of water to make it juicier and to obtain a sauce. Fry until the water is evaporated about 10 minutes and until the sauce gets homogenous. Remove the dish from the heat, place in a crock-pot and sprinkle with grated cheese. Place it in a cold oven and bake until the cheese acquires a nice brown color.
